<p><span class="fontSize2" style="font-family: georgia, palatino;">Balsam Farms is pleased to offer memberships in our 2012 community supported agriculture program, also known as CSA.&nbsp; When you join, your membership fee covers our production costs of planting and harvesting. <br /><br />In exchange for your fee, you receive a weekly share of the freshest available produce grown by Balsam Farms. Depending on what we are harvesting, our farmers will choose a delicious selection of vegetables for you each week. The dollar value of each week&rsquo;s share will vary; over the course of the season you will receive vegetables at a discounted rate. <br /><br />We have two added features this year: <br />A Flower Share (June 30&nbsp;&ndash; September 28) and a Fruit Share (begins June 30). <br /><br />In addition to the produce and flowers you receive at a discounted rate, you will be making a commitment to&nbsp;your community by supporting local farming.&nbsp; <br /></span></p>

Members will have the option to choose between two pickup times. Once you make a choice, we ask that you stick to it so that we can plan our harvests and ensure the freshest produce.<br /></span><span class="fontSize2" style="font-family: georgia, palatino;">Due to our limited storage, pickup outside of your chosen time cannot be guaranteed.</span></p>

<p><span class="fontSize3" style="font-family: georgia, palatino;">1 pound penne pasta<br /> 1 cup 2 percent or skim milk<br /> 1 pound shredded cheddar cheese (or a mixture of your favorite melting cheeses)<br /> 1/2 head cauliflower, cut into florets<br /> 1/4 cup Parmesan cheese<br /> 3 tablespoons chopped flat-leaf parsley<br /> Salt and pepper to taste<br /> 1 tablespoon melted butter<br /> 1/2 cup bread crumbs</span></p>

<p><span class="fontSize3" style="font-family: georgia, palatino;">Despite multiple steps (and my addition of a trip into the oven), this mac and cheese recipe is incredibly fast and easy to put together. Though the first lady's recipe doesn't specify a means to cook the cauliflower, I chose to steam the florets and use the steaming liquid in the puree to infuse more of that great flavor into the dish. A crunchy breadcrumb crust is another addition to the original.</span></p>

<ol>
<li><span class="fontSize3" style="font-family: georgia, palatino;">Preheat the oven to 350&ordm;. Bring salted water to a boil and cook the pasta until al dente.</span></li>
<li><span class="fontSize3" style="font-family: georgia, palatino;">Steam the cauliflower until soft, about 10 minutes. Transfer to a blender along with a few tablespoons of the steaming liquid. Puree the cauliflower, adding more steaming liquid to thin the puree if necessary.</span></li>
<li><span class="fontSize3" style="font-family: georgia, palatino;">In a medium size casserole dish, combine the pasta and hot cauliflower puree. Add the milk, both cheeses, parsley, and season with salt and pepper to taste.</span></li>
<li><span class="fontSize3" style="font-family: georgia, palatino;">In a small bowl, mix the butter and breadcrumbs with your fingers until it resembles damp sand. Sprinkle across the top of the pasta mixture, then place the dish in the oven for about 20 minutes until the top is crispy and the sauce is bubbling.</span></li>

<p class="MsoNormal"><span>Dear Readers,</span></p>
<p class="MsoNormal"><span>It is an overcast, misty day at Balsam Farms. The breeze is blowing; the sky is overcast and the hum of the potato digger is running in the side field. The long, hot, humid days of July seem like a distant memory at this point. The days are getting shorter as we move thourgh autumn. The bustling hustle of the farmers markets have come to an end. At the Farm Stand the tables full of bright-colorful Heirloom Tomatoes have been replaced with the soft warm tones of Winter Squash and Pumpkins.</span></p>
<p class="MsoNormal"><span>Still suffering some of the effects from hurricane Irene, we have had consistently wet weather for the past few weeks. In addition to the rain, we had periods of cold weather that hurt our summer crops.<span>&nbsp; </span>All and all, the growing conditions have been less than ideal, and many of our crops finished earlier than usual, including--much to everyone&rsquo;s dismay--all of our tomatoes and corn.<span>&nbsp; </span>Fortunately we have had a great harvest of potatoes, sweet potatoes, and winter squash which will be available at the stand until Thanksgiving, along with many of our other Fall crops and apples from The Milk Pail in Watermill. We&rsquo;ll also store many of our fall crops and have them available for our wholesale customers throughout the winter.<span>&nbsp; </span>So, although the weather has been pretty bad for a lot of crops, it could have been worse, and we are happy to still have plenty of produce available.</span></p>
<p class="MsoNormal"><span>Did you know that we have jarred goods made from our produce by our friends at A Taste of the North Fork?<span>&nbsp; </span>Some of the Balsam Farms products are Pickled Peppers (we have both Sweet and Hot), Green Tomato Relish, Corn Relish, Tomato Sauce (two varieties of this: Zesty and non-Zesty!) and Pickled Dilly Beans.<span>&nbsp;</span>You can purchase these products at our Farm Stand. They are available individually or in the new Balsam Farms Gift Baskets. Our gift baskets are filled with our own jarred goods as well as a variety of other products we sell along with decorative gourds. If you need a gift for a friend or colleague, a teacher or your neighbor, come on by and pick one up. Take a taste of Balsam Farms home with you for the winter!</span></p>
<p class="MsoNormal"><span>As the days grow shorter and chillier, we would like to share this recipe for Winter Squash Soup from Paulette Balsam.</span></p>
<p class="MsoNormal"><span><span style="text-decoration: underline;">Winter Squash Soup</span></span></p>
<p class="MsoNormal"><span>You can use any of the Balsam Farms Winter Squashes for this recipe. Peel and cube the squash and put it into a pot with 2-3 teaspoons of chopped ginger root, 1 chopped carrot, 4-6 cups of chicken stock, salt and pepper. Simmer until the vegetables are soft. Cool the soup and puree with an immersible blender.</span></p>
<p class="MsoNormal"><span>As the soup simmers on your stove, prepare a side salad of Arugula and Red Onion sprinkled with olive oil and balsamic vinegar, salt and pepper. </span></p>
<p class="MsoNormal"><span>Pair it with a warmed baguette and some of our Eggplant Caponata. </span></p>
